What About It / Cauliflower
Roasted. Mashed. Riced. Pizza-dough’ed.
Cauliflower has become so trendy and versatile it’s even sold ready for an airfryer. I’ve never met a creamed cauliflower soup I didn’t like. But did you know that cauliflower is also fat-free, cholesterol-free, very low in calories & sodium, packed w/vitamins C, K and fiber. Tastes heavenly oven-roasted or pan-fried w/just a little olive oil and seasoning.
Ingredients
1 head cauliflower, chopped
1 scallion/1 clove garlic/1 stalk celery/1/2 bunch asparagus/fresh or dried herbs/seeds etc., minced
2-3 Tbsp olive oil, seasonings
4 cups water or broth
Optional: 1-2 Tbsp crumbled feta cheese
Optional: cooked fish, steak, tofu, pulled chicken or pork
Method
Mince the veg/herbs, lightly season with salt or sub, slightly pan-brown in a little oil.
In a med pot filled ½ way with water or broth, boil chopped cauliflower on high 3 minutes or until tender-crisp.
Reserving the vegetable water for later use, drain, pat dry: this always aids in browning food.
In a wide skillet, brown cauliflower on med-high (pre-heated) – in a little oil and chosen spices/herbs for 2-3 minutes.
Flip. Keep browned sides up. Add the minced veg/seeds and any fresh herbs. Brown for 2 more minutes or until desired color.
Stir together lightly, adding any cooked meat and/or cheese. Remove from heat and cover for 2-3 minutes.
Plate whimsically.
